For some people, it’s macaroni & cheese. For others, anything made in a casserole dish topped with French fried onions. My favorite comfort meal by far is homemade fish tacos made with fresh fish caught by my hubby Ryan. They are crunchy and bright and go perfectly with beach music and smiling faces. I’d like to say that I make these. But, usually, Ryan does the frying and I put the toppings in cute bowls and play Bob Marley and Jack Johnson. That counts, right?
The Captain’s Fish Tacos
Ingredients
- The freshest fish you can find (We usually use snapper, grouper, or hogfish) cut into strips
- Panko Breadcrumbs
- Eggs
- Vegetable Oil
- Corn Tortillas
- Shredded Cabbage
- Fresh Salsa
- Cilantro, chopped
- Shredded Mexican style cheese
- Lime wedges
Instructions
- Egg and Bread fish
- Fry in vegetable oil over medium high heat until golden brown
- Toast tortillas in a dry pan until blistery
- Put toppings in cute bowls (very important)
- Play beach music
- Eat until you burst
